💡Spotlight: RD Side-Hustle
Meet Lexi Guttormson who makes food-scented soy candles.
Q#1. What do you do for your full-time dietitian job?
I’m a clinical dietitian at the University of Minnesota Medical Center in Minneapolis. I work in an intermediate care unit and specialize in nutrition support…Working in the hospital makes me grateful for the little things in life, and I get the privilege of witnessing miracles on a regular basis.
Q#2. What's your side hustle and how did you get started with it?
My side hustle, aka my “night job”, is being a candle artist and new small business owner of an Etsy shop, Berry Wick and Cedar!… All of our candles are made using high quality soy wax, and all fragrances are phthalate-free.
As a dietitian I’ve always loved finding unique foodie gifts in stores but have surprisingly not seen a lot of foodie themed candles on the market. This gave me the idea to create my own, and from there I have been having so much fun exploring a more artistic, creative side of myself. From cherries, to berries, coffee, to mini waffles, and even fudge mini donuts, I hope that my candles can bring joy and a delicious aroma to your home.
Q#3. What's your long-term plan or goal for your side hustle?
My husband and I have aways wanted to create some kind of artistic business together and eventually would both love to participate in local craft show events around the Twin Cities.

Trust the Process: A Food Scientist’s Perspective on Nova - IFT.org
Matt Teegarden, Ph.D. - Food Scientist
“…If I sound critical of Nova, it’s because I am. The food and nutrition communities are moving toward an exciting future where dietary recommendations are more precise, but Nova works against this with its lack of precision…Do the shortcomings of Nova mean that we shouldn’t be researching UPFs? Not necessarily. They are a huge part of our food system, after all, and there are some real questions that need to be answered. The clinical research we have suggests that people eating high UPF diets tend to eat excess calories, and it is reasonable to wonder why.”

Consumers Want Vegan Products to Be Cheaper Than Meat: Study
“…Numerous studies have pointed to health and taste as the most important factors behind plant-based meat consumption. Recently, affordability has crept up as a crucial point of influence, as inflation continues to squeeze consumers’ wallets…”
